酸辣汤 Hot and Sour soup

Hot and Sour soup is one of the healthiest mushroom soup dishes there is. You can serve this as a starter for your dinner guests or have it as a meal. The soup is spicy, sour and hot all in one mouthful and is so easy to make at home following our recipe below.

 

INGREDIENTS 

Serves 4

200g tofu, sliced into strips
170g bamboo shoots, julienned
110g cloud ear fungus, julienned
110g dried mushroom, julienned
2 eggs beaten
1.4L water
4 Tbsp corn flour
1 Tbsp green onions, finely chopped
1 Tbsp coriander, finely chopped

SEASONING

3 Tbsp Shaoxing rice wine
2 tsp ground white pepper

 

METHOD

1 Add all ingredients (except eggs, green onions, coriander and cornflour) in a large pot and bring to a boil.
2 Add all seasoning, lightly stir and bring to a boil again. Thicken the soup with cornflour.
3 Then add the eggs and stir well. Serve in a bowl.
4 Sprinkle green onions and coriander on top.
