This is a delicious and extravagant fried rice that will have you craving more. The roast duck is delicious on its own, but in this recipe it gives a spiced savoury meatiness to the rice. 

Ingredients

450g free range duck legs, Skin On (any local supermarkets or butchers) 
 For the Marinade
2 cloves of garlic, peeled and finely grated
1 inch knob of fresh root ginger, peeled and finely grated
1 tsp Chinese five spice powder
1 tbsp Shaoxing rice wine or dry sherry
2 tbsp runny honey
 To Cook the Rice
250g Sushi Short Grain Rice, washed well, rinsed in water
450ml filtered water
 For the Cabbage Fried Rice
1 tbsp rapeseed oil
2 cloves of garlic, peeled and finely grated
1 red chilli, deseeded and finely chopped
1 spring onion, top and tailed and finely chopped
1/4 white cabbage, finely shredded
Half of cup of frozen peas (optional) 
1 tbsp Shaoxing rice wine
1 pinch of ground white pepper

This is a unique dish using Hong Kong XO sauce, a spicy seafood sauce with lots of umami flavor.  This is a perfect mid-week meal, all made in one pot with minimal fuss. 

Vegan can replace XO Sauce with LKK Chiu Chow Chilli Oil for similar effects.

Ma Po Tofu is thought to have existed as early as 1254, with one account indicating it existed in a suburb of Chengdu, the capital city of Sichuan province.

Ma Po Tofu is traditionally served with meat, such as minced pork or beef, but this recipe can be easily adapted for vegetarians by swapping out the meat for  sweetcorn and the Oyster Sauce for Vegetarian Oyster Sauce. 

Ingredients

200g firm tofu
90g minced pork/minced beef 
1 small onion 
1 small portion of bird eye's chilli (or mild chillies) (optional) 
2 Tbsp LKK Double Deluxe Soy Sauce (or Premium Light Soy Sauce) 
Dash of LKK Pure Sesame Oil 
1 Tbsp LKK Premium Oyster Sauce 
1 Tbsp vegetable oil
1 tsp crushed sichuan peppercorns 
2 capsule Shaoxing Wine
220ml chicken stock (or hot water)  
1 Tbsp LKK Chilli Bean Sauce (or LKK Black Bean Garlic Sauce)

 

You can add bird eye's chilli if you can take really spicy food, if not, just skip the chilli or replace with mild ones.
